Sea Grape honey not only tastes amazing, it is our favorite Florida honey! It has a light strong floral taste. You can almost taste the flowers in it. Some describe buttery undertones. It has a tendency to crystallize quickly due to its higher glucose/fructose ratio. If you do not like creamed honey, just place in warm water at 120 degrees to remelt the honey.
We are sure there are numerous health benefits to Sea Grape honey but it is so rare there are no studies to guide us. Bees collect nectar from flowers to make honey and there are unique phenolic compounds from different plants in each flowers nectar. So different types of honeys contain different plant compounds with the sugars. The Sea Grape tree is know to have Fucoidan which has anti cancer properties.
Heavily processing the honey destroys the enzymes and great benefits of the honey. It's important to cold pack the honey so the heat does not destroy its great benefits. It also needs to be lightly screened to allow the great particles to be retained in the honey. Honey is naturally kosher. Raw honey for allergies is often taken for the pollens in the honeys.
